Bacon and Shrimp Stuffed Avocado

  • 1/4 cup bottled Ranch dressing
  • 100g (3.5oz) HORMEL® Real Bacon Bits, Pieces or Crumble
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons lime juice
  • Pinch salt and pepper
  • 4 ounces peeled and cooked medium shrimp, coarsely chopped
  • 1 large, ripe avocado, halved and seed removed
  • Garnish: HORMEL® Real Bacon Bits, Pieces or Crumble, dill sprigs, thinly sliced green onion and lime wedge
  • 1.In a medium bowl, combine dressing, HORMEL® Real Bacon Bits, Pieces or Crumble, dill, green onions, lime juice, salt and pepper.
  • 2.Stir in shrimp.
  • 3.Scoop avocado from shell using a teaspoon; add to bowl. Reserve avocado skins.
  • 4.Fold avocado into shrimp mixture. Spoon mixture into avocado skins.
  • 5.Garnish with extra HORMEL® Real Bacon Bits, Pieces or Crumble.
