Quick Bacon Potato Salad

  • 1 (24-ounce) package red potatoes
  • 1 celery stalk, thinly sliced
  • 1 small red onion, cut into quarters and thinly sliced
  • 3/4 cup salad dressing
  • 2 tablespoons yellow mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dillweed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 hard-cooked large eggs, peeled and chopped
  • 100g (3.5oz) HORMEL® Real Bacon Bits, Pieces or Crumble
  • 1.Cook potatoes according to package directions until tender; drain well. Cool and set aside.
  • 2.In large bowl, combine celery, onion, dressing, mustard, lemon juice, dillweed, salt and pepper. Stir in cooled potatoes and eggs. Cover; refrigerate several hours.
  • 3.Stir in HORMEL® Real Bacon Bits, Pieces or Crumble just before serving.
