Southwestern Bacon Burritos

SERVINGS: 4
  • 1 tablespoon butter
  • 1/2 cup diced onions
  • 1 bell pepper, diced (use red, yellow, orange or green or a combination)
  • 8 eggs, beaten
  • Salt and pepper, to taste
  • 1/2 cup HORMEL® Real Bacon Bits, Pieces or Crumble
  • 1 cup shredded pepper jack cheese
  • 4 flour tortillas
  • 1/2 cup prepared red salsa
  • 1.In large skillet over medium high heat, melt butter. Add diced onions and pepper.
  • 2.Sauté vegetables 5 minutes or until tender, stirring often.
  • 3.Add eggs to vegetable mixture. Gently cook and stir until eggs are soft scrambled.
  • 4.Add salt and pepper to taste. Sprinkle HORMEL® Real Bacon Bits, Pieces or Crumble and cheese on top.
  • 5.Spoon egg mixture down center of each tortilla. Spoon salsa over eggs and roll up, tucking in ends, if desired.
