Cheesy Bacon Cauliflower

  • 1 medium head cauliflower, cut into 1-inch florets
  • 1 1/4 teaspoons kosher salt, divided
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 teaspoons mustard powder
  • 1/4 teaspoon freshly ground pepper
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1/2 cup HORMEL® Real Bacon Bits, Pieces or Crumble
  • 1.Heat oven to 200°C (400°F).
  • 2.Spread florets in lightly greased, 2-quart baking dish. Sprinkle with ¼ teaspoon salt. Bake 10 minutes.
  • 3.Reduce oven temperature to 175°C (350°F).
  • 4.In medium saucepan, melt butter over medium heat. Whisk in flour; cook 1 minute, whisking constantly. Slowly add milk, whisking constantly. Bring mixture to a boil. Reduce heat to medium-low. Stir in mustard powder, remaining 1 teaspoon salt, and pepper.
  • 5.Gradually add 1 1/4 cups cheese, whisking until smooth.
  • 6.Pour cheese sauce over cauliflower. Sprinkle with remaining 1/4 cup cheese and HORMEL® Real Bacon Bits, Pieces or Crumble.
  • 7.Bake 30 minutes or until bubbly.
