Game Day Potato Skins

SERVINGS: 8 PREP TIME: Under 15 minutes TOTAL TIME: 1 hour
  • 4 large baking potatoes
  • 1/4 cup butter, melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 cups shredded Cheddar cheese
  • 1/2 cup HORMEL® Real Bacon Bits, Pieces or Crumble
  • Garnish: chopped green onions
  • 1.Heat oven to 200°C (400°F).
  • 2.Pierce each potato with fork. Bake potatoes directly on oven rack 50 minutes or until easily pierced with a knife. Let stand 10 minutes.
  • 3.Cut potatoes in half lengthwise. Scoop out center of potato, leaving about 1/4 inch intact. Reserve potato flesh for another use.
  • 4.Brush both sides of potato skins with butter. Season both sides with salt and pepper.
  • 5.Place potato skins on a baking sheet, skin sides up and broil 2 to 3 minutes or until crisp.
  • 6.Flip skins and broil 2 to 3 minutes or until lightly browned.
  • 7.Divide cheese and HORMEL® Real Bacon Bits, Pieces or Crumble evenly among skins and broil additional 2 minutes or until cheese has melted. Garnish with green onions, if desired.
